MEDITERRANEAN SALAD

I saw this salad inspiration over on Pinterest (where I generally get some of the basics for my meal ideas) and I wanted to make it immediately.  It was so easy to create and I’ve made it a number of times already because it’s so delicious!  If you’re not into kale you can always substitute for a lettuce of your choice.  Always remove the middle stems of your kale to reduce that bitter taste. I hope you love it!

Ingredients
  1. 1/2 cup of sliced green olives
  2. 1/2 cup of pepperoncini pepper chopped
  3. 1 handful of sun dried tomatoes chopped
  4. 1 cup of chopped artichoke hearts
  5. 1 cup of diced tomatoes
  6. 1 cup of diced cucumber
  7. 1-2 bunches of kale depending on size
  8. 1/4 cup of chopped red onion
Dressing
  1. 1/2 cup of olive oil
  2. 2 tbsp of balsamic vinegar
  3. 1 tsp of red wine vinegar
  4. Juice of half of a lemon
  5. 2-3 cloves of garlic pressed
  6. Salt and pepper to taste
Instructions
  1. Wash and chop veggies
  2. Chop all items
  3. Add to bowl
  4. Add dressing
  5. Mix together
  6. Enjoy πŸ™‚
Notes
  1. We add falafel or quinoa balls for some added protein and substance. SO delish!
