Creating healthy meals doesn’t have to be challenging or time consuming. Some of our favourite dishes are extremely easy to create and are packed with nutrients and protein. Quinoa bowls are one of our favourite things to make because not only are they super delicious but they keep us full for a long period of time. This is one of our favourites and I know you’ll love it too!

- 1 avocado
- 1/2 cup of quinoa
- 1/2 onion
- 1 can of chickpeas rinsed well
- 1/2 cucumber
- 1 bunch of kale blanched
- Handful of cherry tomatoes
- 1/2 of a bell pepper
- 2 tbsp of olive oil
- 1 tsp of balsamic vinegar (or more to taste)
- Pinch of salt and pepper
- Cook quinoa as per box instructions
- Blanche kale using hot water, ring out all the water
- Chop veggies
- Add vinegar, oil, salt and pepper then serve as shown above.
