ROASTED CHRISTMAS VEGGIES

Ingredients
  1. 1 small bag of cranberries
  2. 1 bag of brussels sprouts
  3. 1 bag of chopped pecans or approx. 1/2 cup
  4. 1 large sweet potato
  5. 1 tbsp of olive oil
  6. 1 tsp of balsamic vinegar
  7. 1 tbsp of oregano
  8. Salt and pepper to taste
Optional
  1. Cinnamon
  2. Nutmeg
  3. All Spice
  4. Maple Syrup
Instructions
  1. Preheat oven to 400.
  2. Cut the brussels sprouts in half.
  3. Peel the sweet potato and cut into cubes.
  4. Mixed everything in a mixing bowl until veggies are well covered.
  5. Place the veggies in a baking dish.
  6. Bake for 30-45 minutes turning halfway through.
