Ingredients
  1. 1-2 bunches of kale (depending on size)
  2. 2/3 of a cup of soaked cashews
  3. 1 tsp of balsamic vinegar
  4. 1-2 tsp of cajun spice (depending on your preference)
  5. 1/4 cup of olive oil
  6. 1/4 cup of warm water
  7. 2 large cloves of garlic (use more if small)
  8. juice from 2 lemons
  9. Sea salt and pepper to taste
Optional
  1. Handful of pita chips
  2. Coconut bacon
Instructions
  1. Wash and chop the kale
  2. Blend the remaining ingredients in a processor or magic bullet until creamy.
  3. Add more water as need to get a creamy texture.
  4. Pour the dressing over your kale and massage in with your hands to cover the leaves.
  5. Top with coconut bacon and pita chips if you wish.
